Ingredients:
Crust:
• 2 cups all-purpose flour
• 2 tablespoons sugar
• 1/2 teaspoon salt
• 1/2 – 2/3 cup cold water
Filling:
• 4 – 5 cups crab apples, cored and thinly sliced
• 3/4 – 1 cup, to taste, sugar
• 1/4 cup flour
• pinch of salt
• 2 tablespoons water
• 1/2 – 1 teaspoon cinnamon
Instructions:
1. Heat the oven to 425°F (220°C). Line a baking sheet with parchment.
2. Make the crust: mix the flour, sugar, and salt. Add ½ cup cold water and stir until a rough dough forms, adding more water a teaspoon at a time only if needed.
3. Knead very briefly—just until it holds together. Don’t overwork it, since this crust has no fat and can become tough.
4. Roll the dough into a roughly 12-inch circle on a lightly floured surface. Transfer it to the baking sheet.
5. Toss the sliced crab apples with the sugar, flour, cinnamon, and salt. Let them stand for 10 minutes, then pile them in the center of the dough, leaving a 2-inch border.
6. Fold the dough edge over the apples, pleating as you go. Sprinkle the remaining sugar over the exposed fruit and crust.
7. Bake at 425°F for 15 minutes, then reduce the heat to 375°F (190°C) and bake for another 35–45 minutes, until the apples are tender and the juices are bubbling.
8. Cool for at least 30 minutes before slicing so the filling can thicken.
Notes: it may overflow on you during baking, mine did… got this recipe from Duck.ai after asking if there was a way to make a pie crust to use up my crab apples as I was tired of just eating them raw. Might try baking them in the microwave next…
